Lighten Up to Beat the Heat

Summer sure has arrived. It's hot and humid here and other parts of the country are suffering from 100-plus degree temperatures. This time of year we need to slow down and be careful. We should monitor the amount of sun exposure, stay hydrated and eat lighter.

This column explores favorite summer wines and pairs them with light meals. Whether the menu is for a family meal or entertaining, lighter food and beverage is sure to please during these hot summer days.

Lighter style wines

White wines are generally enjoyed in the warmer months, as they are a light, refreshing beverage. Wines that are lower in alcohol and have good acidity are ideal. The acidity helps cleanse your palate and provides a mouth-watering experience that stimulates your thirst and appetite. The challenge is to find summer wines that are satisfying with ripe fruit.

The global market has introduced many new wines to try, which is both fun and a goal of this column. When thinking of white wines that are light summer sippers and also pair well with food, a number come to mind, including: Pacific Northwest Rieslings and Pinot Blancs, Italian Pinot Grigio and Soaves, Argentinean Torrontes, Chilean Sauvignon Blancs, South African Chenin Blancs and French Muscadet and Sancerre. While some summer sippers are popular, they are not food friendly. An example of this would be some New Zealand Sauvignon Blancs, as they tend to be overly citrusy and make pairing with food difficult.

Lighter fare

At the beginning of each summer, we clean up our grills and get ready for some serious backyard barbecue. Memorial Day, Father's Day and July 4th weekends are all holidays where we grill steaks, bratwurst and ribs. These bold, spicy meals are often paired with big red wines, like Cabernet Sauvignon and Zinfandels.

Now that the summer heat is on, many folks turn to grilling lighter fare like fish and chicken. The wines that pair best are the lighter styles, like Pinot Noir (red) and Pinot Gris (white) with salmon or Pinot Grigio and Torrontes with chicken. The French love to pair Muscadet with shellfish.

Something my wife and I like to do during the hot summer months is to add meat to a side salad and transform the dish into our entrée. An easy example is to add grilled chicken or shrimp to a leafy green salad.

A favorite green salad base can include red and green leaf lettuce and add any number of ingredients such as strawberry slices, mandarin orange sections, toasted slivered almonds, blue cheese crumbles and shaved shallots. Fresh orange and white balsamic vinaigrette enhances this salad and its toppings.

Summer Citrus Vinaigrette

¼ cup Chopped Onions
2 Cloves Garlic
¼ Cup Extra Virgin Olive Oil
¼ Cup Vegetable Oil
4 Each Juice from Four Freshly Squeezed Whole Oranges
¼ Cup Sugar
2 tsp Dijon Mustard
¼ Cup White Balsamic Vinegar
Salt & Pepper to taste

In your blender, add the onion, garlic, orange juice, sugar, Dijon mustard, Balsamic vinegar and blend. Slowly add both oils. Once emulsified, salt and pepper to taste.
To create a simple pasta salad entrée, take a pasta side salad with a creamy base dressing and add some grilled salmon, gently flaked with a fork. This is a wonderful way to use leftover grilled salmon. A favorite pasta salad includes lemon, dill, onions, cherry tomatoes and peas.
Here's a quick and easy recipe.

Dilled Pasta Salad with Grilled Salmon or Shrimp (optional)
Serves Four

6 Cups Cooked Pasta
2 Tbsp Fresh Dill
2 Tbsp Fresh Lemon Juice
¼ Cup Green Peas, cooked
¼ Cup Chopped Red Onions
10 Ea Cherry Tomatoes, quartered
½ Cup Mayonnaise, light or regular
½ Cup Sour Cream, light or regular
Salt & Pepper to taste
8 Oz Flaked Grilled Salmon or Shrimp (optional)

Add all ingredients except salmon or shrimp in a bowl and toss. Gently fold in salmon or shrimp. Salt and pepper to taste. Refrigerate for 1 hour before serving.

This is symptomatic of either the Bellows or the Main Valve malfunctioning and are Repairs You can Do yourself.

The Bellows
During the FILL cycle the main valve is dumping water into the sterilizing chamber while each of the three heating elements are warming up the chamber. As the chamber warms up, cold air is pushed out through the bellows housing. When the air gets hot enough, the bellows expands and closes off the valve and allows the system to pressurize. During the VENTING cycle everything operates in reverse. The main valve is opened, the sterilizing chamber vents through the condensation coils in the water reservoir. When the pressure is released and the air-cools, the bellows contracts to its original size.

Replacement of the Bellows is a normal preventative maintenance item that should be done at least annually. If this hasn't been done for a while, start by replacing it first and then check the operation again. The Main Valve
The Main Valve normally opens and closes allowing the water to flow in and out of the chamber.
When the main valve is in the STERILIZE mode, the valve closes off the FILLING port to the main chamber and at the same time applies total line voltage to the center heating element only. The two outside heating elements are not energized in the STERILIZE mode. A mechanical timer is set by the operator for the duration of the STERILIZE cycle (30 minutes). Keep in mind, the timer is not a switching mechanism, it only alerts you when the set time is up.
Once the bell goes off, it is your responsibility to go back to the machine and turn the control knob to the VENTING position. This in turn opens the VENT side of the main valve and allows steam to vent back into the water reservoir. At this time, once again the line voltage is divided equally by the three heating elements. The operator opens the door just slightly, resets the timer and allows the instruments to dry. When the DRYING cycle is complete, the operator turns the control knob to the OFF position, which shuts off all power and closes the main valve.As technical as all this may sound, the fact of the matter is both of these fixes are pretty straight-forward repairs - and - something you can do yourself. A wrench, a screwdriver and perhaps a pair of pliers are the only tools you will need.

Homemade Ice Cream Desserts

When I was a child in the 1970's summer holidays were spent at our caravan on the east coast of Yorkshire. Each July I, along with my mum and my grandparents, was loaded in to my dad's trusty Hillman and driven the 50 miles from our home to the seaside for six whole weeks.

My dad could only spend the first week with us before having to drive back home to work, so most days were spent on the beach building sandcastles, splashing about in the sea with friends or picking fruit in nearby hedgerows and helping my grandma turn them in to delicious fruit pies. My dad returned each weekend with the car so that we could so the weekly shopping in the nearest town. I used to look forward to these weekly shopping trips, not because I enjoyed being dragged around the shops, but because thy always culminated in a visit to the ice cream parlour on the seafront.

The ice cream parlour was only small, it seated about twenty people on red leather banquettes next to grey formica tables. It served coffee in glass cups and saucers and a huge array of different ice cream sundaes. The menu was totally wasted on us however as we always placed the same order every week, a Knickerbocker Glory for me, a Banana Split for my dad and a Peach Melba for my mum. It became a family tradition, a ritual which we all followed, and each week when the towering confection was placed in front of me my grandad would steal my spoon and pretend to eat my Knickerbocker Glory while I shrieked in mock horror.

A few years ago I found myself back in Yorkshire at my home town, and 50 miles not being what it was back then I soon drove to the seaside town for a trip down memory lane. As the waves crashed against the crumbling sea wall and the wind blew fast food wrappers and other detritus down the shabby seafront filled with amusement arcades, fast food restaurants and discount stores I mourned for a once glorious seaside town. As I walked along the promenade wishing I hadn't returned I came across a small shopfont and opening the door entered the same ice cream parlour from my childhood, red banquettes, grey formica tables and still serving Knickerbocker Glorys and coffee in glass cups and saucers.

Below I have recreated my favourite desserts from my childhood. They are not the most sophisticated versions of these desserts you will ever find and I make no excuses for that. They are the versions that I love as they remind me of happy carefree days in a small seaside town where an ice cream parlour, a relic from different days, is still holding its own, it's light undimmed among the big boy chains.Most of all though they remind me of people long gone who made me the person I am today and made my childhood such a happy time.

Recipe for Knickerbocker Glory

2 scoops of homemade Vanilla Ice Cream
1 scoop of homemade Strawberry Ice Cream
4 tablespoons homemade Strawberry Syrup
6 Peach Slices (tinned)
3 Pear Halves (tinned)
3 tablespoons Pineapple Chunks (tinned)
1 tablespoon Cherries (tinned)
1 tablespoon Toasted Almonds
Whipped Cream

To construct the Knickerbocker Glory

Place two peach slices and one pear half (cut in to two) in the bottom of a tall glass and add a tablespoon of the strawberry syrup.
Add a scoop of vanilla ice cream and two more peach slices, another pear half, a tablespoon of pineapple chunks and a third of the cherries to the glass. Pour over another tablespoon of the strawberry syrup.
Add the scoop of strawberry ice cream and the fruit as above to the glass. Pour over the final tablespoon of strawberry syrup
Add the final scoop of vanilla, the remaining pineapple chunks and cherries (leaving one cherry for garnish). Cover with whipped cream
For a garnish sprinkle the toasted almonds over the cream and place the final cherry on the top.

Recipe for Banana Split

1 scoop homemade Vanilla Ice Cream
1 scoop homemade Chocolate Ice Cream
1 scoop homemade Banana Ice Cream
2 tablespoons homemade Strawberry Syrup
1 Banana
75g Dark Chocolate
One tablespoon Toasted Almonds
Whipped Cream

To create the Banana Split

Pour the two tablespoons of homemade strawberry syrup on to a plate. Split the banana length ways and place one half on each side of the plate.
Place the three scoops of ice cream in the middle of the banana as though you were making a hotdog shape
Melt the chocolate in a bowl over a saucepan of boiling water and pour over the ice cream. Add the whipped cream and toasted almonds and serve

Recipe for Peach Melba

3 scoops of homemade Vanilla Ice Cream
6 Peach Halves
2 tablespoons homemade Raspberry Sauce

To Create the Peach Melba

Place three tinned peach halves in the bottom of a glass sundae bowl and cover with a tablespoon of raspberry sauce. Take three scoops of vanilla and place on top of the peach halves.
Cover each scoop of vanilla with three further peach halves, placing these on top of the ice cream so that the outside of the peach is uppermost. Cover with a further tablespoon of raspberry sauce.
Top with a swirl of whipped cream and a handful of toasted almonds
